Cajun Fried Trout

2 cups all-purpose flour
3 teaspoons salt
2 teaspoons Cajun seasoning
1-1/2 teaspoons pepper
1/8 – teaspoon ground cinnamon

2 lbs trout fillets
2 eggs
¼ cup water
2 cups mashed potato flakes
6 teaspoons vegetable oil

Combine the first 5 ingredients in a large zip-lock bag. Shake real well.
Add the fillets one at a time and shake to coat. Whisk eggs and water in a bowl. Place potato flakes in another bowl.

Dip each coated fillet into the egg mixture, then coat in the potato flakes repeat with each fillet twice.

In a large skillet, heat 3-4 tablespoons oil over medium-high heat. Cook fish in small batches (2-3 at a time) for 3-4 minutes n each side or until the fish flakes easily with a fork. You can add oil as needed
