Caribou Meatloaf

1-2 pounds Ground Caribou or ground meat of your choice
1/2 medium Onion
1/2 medium Green Bell Pepper
1 can diced Tomatoes
1/2 cup Oatmeal
1 teaspoon Salt and Pepper
1 Egg slightly beaten

In a large mixing bowl, break up your ground meat. Add remaining ingredients, and work into the meat until well blended. Form into a loaf.
Place in center of dutch oven. Add cabbage, onion, carrots and potatoes on sides of loaf. Pour 1/4 cup of water over vegetables to help steam.

Topping:
Combine 1/4 cup ketchup, 1 tablespoon mustard, 1 tablespoon brown sugar, and SmokeeJo Datil Pepper Hot Sauce to taste. Wisk until well blended.

Spread on top of meatloaf and Bake for 45 minutes to 1 hour.
