Dutch Oven Shrimp Casserole

2 lbs. Shrimp (peeled and de-veined)
1 lb. Sausage (cooked)
1 cup Cooked Rice
1 medium Onion (chopped)
1 Green Bell Pepper (chopped)
1 stalk Celery (chopped)
¼ cup Butter
1 can Cream of Mushroom Soup
1 can Cream of Cheddar Soup
1 bunch Green Onion tops
Salt & Pepper (to taste)
In a pan, sauté the onion, bell pepper, and celery. Add the sausage until just heated. Set aside.
Melt ¼ cup butter; add the shrimp and sauté for just a couple of minutes, just as they have turned pink.
Salt and pepper.

Mix in a bowl the cream of mushroom soup and the cream of cheddar soup. Add onion tops and the cooked rice. Salt and pepper. Then add sausage mixture & soup mixture. Blend.
Spray Oil in a casserole dish.

Top with cheese
Bake 20 -30 minutes on 350 degrees. (For your Dutch Oven: 8 coals on the bottom, and 15 on top)
