Grilled Alaskan Potato Boats
4 medium Baking Potatoes
1 tbsp. Butter, melted
¼ cup SmokeeJo’s famous Datil Pepper Sauce
½ cup Cheddar Cheese (shredded)
2-3 tbs. Smoked Salmon (chopped into tiny bit pieces)
½ cup chopped Tomato
¼ cup sliced Green Onions (green tops included)
¼ cup Sour Cream
2 tbsp. Ranch Salad Dressing
1 tbsp. Smoked Salmon Bits
1/2 tsp. Garlic Powder
3 tbsp. SmokeeJo’s Famous Datil Pepper Sauce
Scrub potatoes. Place each potato on aluminum foil. Rub olive oil generously over each spud.
Rub each one with the kosher salt and wrap tightly in the aluminum foil. Bake at 425 degrees for 1hour or until potatoes are tender. Cool enough to be able to handle.
Cut potatoes in half lengthwise. Scoop out pulp, leaving a ¼ inch thick shell. Discard pulp. Brush the inside of each potato with melted butter. Spoon 1 tsp. hot sauce into each potato shell. Sprinkle each with cheese. Add salmon bits.
Grill potato skins on an uncovered grill directly over medium coals for 10-12 minutes or until skins are crisp. Sprinkle with tomato and green onions. Top with sour cream mixture.
*For a variation you can use cilantro to sprinkle on top. And as an added flavor add bacon bits with the salmon!
