Grilled “Nutty” Salmon with Grilled Alaskan “Gold” Pototoes and Onions
Ingredients
2 8oz. salmon fillets
2 Tablespoons butter
½ teaspoon lemon pepper
1 teaspoon Italian Seasoning
¼ cup brown sugar
¼ cup finely crushed pecans
Non-stick cooking spray
1 teaspoon herb seasoning
Preparation
Heat grill to medium high. Spray a large piece of aluminum foil with nonstick spray. Place the fillets on foil, skin side down. Melt butter. Remove from heat and mix butter with Italian and herb seasonings. Brush mixture on fillets. Seal aluminum foil, but wrap lightly to allow a little steam to escape. Place on grill and cook 5-10 minutes until salmon is flakey. You want to be sure not to overcook and dry it out. When cooked, remove from heat and open aluminum packet. Sprinkle with brown sugar. Close packet back up for a few minutes to allow heat from the fish to melt sugar. Pat on pecans and serve!
Grilled Alaskan “Gold” Potatoes and Onions
Ingredients
8 potatoes, pared
2 onions, thinly sliced 1/4′ thick
1 Tablespoon fresh parsley, chopped
1 1/2 teaspoons salt
fresh ground black pepper
1/4 cup margarine
1 cup beef stock, hot
Preparation
Mix potatoes and onions together. Season potatoes and onions with parsley, salt and pepper. Spread 1/2 deep in buttered aluminum foil pan. Dot all around with margarine or butter. Add hot stock. Place on grill on indirect heat, cover and bake 30 to 40 minutes until potatoes are tender, brown and crusty and the liquid has disappeared.
