Grilled Rockfish Parmesan
4 Rockfish Fillets (4 to 6 oz each)
½ cup grated Parmesan cheese
1 stick of melted butter
2 medium red bell pepper, cut in strips
4 sheets (12 X 18) each) Heavy Duty Aluminum Foil
Preheat grill to medium-high. Spray foil with nonstick cooking spray. Put melted butter in a bowl. Dip the fillets in the butter. Roll the fillets in the grated Parmesan cheese. Center one fillet on each sheet of aluminum foil. Sprinkle with cayenne pepper. Top with vegetables. Bring up sides of the foil and double fold. Double fold ends to form a packet, leaving room for the heat to circulate inside the packet. Repeat to make four packets. Grill 10 to 12 minutes in covered grill.
