Grilled Wild Goose

1 Goose
1/2 cup olive oil
1/2 cup soy sauce
1/2 cup brown sugar
1/2 tsp. Smoked salt
1 tsp. Garlic powder
1 tsp. Onion powder
1/2 cup thawed orange juice concentrate
1/2 cup honey Dijon mustard
1/4 cup honey

Mix the oil, soy sauce, brown sugar, seasonings, orange juice and mustard in a bowl. Cut the goose into chunks or slice about 1″ thick. Pour the marinade over the goose pieces in a shallow glass pan and marinate for about 4 hours, stirring occasionally. Remove the goose and drain on paper towel. Mix some honey with 1 cup of the reserved marinade. Grill goose pieces over medium heat for approximately 20 minutes. Baste with marinade.
