Fried “Pickled” Pike

2 lbs Pike fillets
1 egg
2 tablespoons dill pickle juice
Salt
Lemon pepper
1 cup instant mashed potato flakes

Beat egg, pickle juice, salt, and lemon pepper. Dip fish in mixture, then coat with potato flakes. Fry 3-5 minutes on each side or until brown.
