Grilled Mexican Bread
1 loaf (1 pound) French Bread
1 cup Mozzarella Cheese, shredded
1/2 cup Mayonnaise or Salad Dressing
1/4 cup Roasted Bell Pepper, finely chopped and well drained (from 7 oz. jar)
1 tablespoon Cilantro, chopped fresh (if desired)
1/2 teaspoon Cumin, ground
1 small Onion, finely chopped
Heat oven to 400 degrees. Cut bread loaf horizontally into 3 layers. Mix remaining ingredients.
Spread half of the cheese mixture over bottom layer. Top with second layer; spread with remaining cheese mixture. Top with third layer; press firmly.
Wrap securely in heavy-duty aluminum foil. Grill on medium heat or bake at 375 degrees for 15-20 minutes or until hot. Makes 12 slices.
