Grilled Salmon Fiesta with Diego Salad
Ingredients
4 salmon fillets
1 Tablespoon salt
1 teaspoon pepper
1 Tablespoon SmokeeJo’s Hungarian Game Spice
2 Tablespoons chili powder
1 Tablespoon cumin
½ teaspoon cayenne pepper
1 teaspoon chopped garlic
SmokeeJo’s Datil Pepper Hot Sauce
Preparation
In a bowl, mix all of the dry ingredients and garlic together and rub well all over fillets. Let this set in the refrigerator for about an hour. Grill over medium coals until done. Top with your favorite salsa and a dash of SmokeeJo’s Datil Pepper Hot Sauce and serve wrapped in a tortilla.
Diego Salad “SmokeeJo’s special recipe for Salsa”
Ingredients
6 large tomatoes (very ripe and chopped)
Datil Peppers (as many as you can stand!) Jalapeno or pepper of choice can be used instead
1 large yellow onion
Olive Oil
Black Pepper to taste
Salt to taste
Garlic powder to taste
Fresh Italian Bread
Preparation
Put all ingredients in a big bowl and stir, stir, stir!!!
The longer it sits in these juices the better it gets!!!
