Grilled Stuffed Broccoli and Cheese Halibut
4 Halibut fillets (1-1 1/2″ thick each)
SmokeeJo’s Hungarian Game Spice
Garlic Powder
Black Pepper
8 strips of Bacon
Stuffing:
1 cup Mayonnaise
Juice of 1/2 fresh Lemon
1 teaspoon Salt
1 teaspoon Pepper
1/2 teaspoon Garlic Powder
1 cup shredded Sharp Cheddar Cheese
1/4 cup shredded Parmesan Cheese
1 small Yellow Onion, chopped
2 cups fresh cooked, chopped Broccoli
Mix all above ingredients well.
With a knife, cut the center of the fillets to make a pocket. Season both sides of fillets with Garlic Powder, Hungarian Game Spice, and Black
Pepper to taste. Pack each fillet with stuffing mixture. Wrap 2 strips of bacon around each fillet and criss-cross to secure.
Place fillets on either a grilling pan or havy duty aluminum foil that has been sprayed with grilling oil. Grill on medium heat for 7-10 minutes
per side or until bacon is cooked OR bake in an oven at 350 degrees for 20 minutes.
