Deep Fried Marinated Salmon with Grilled Cole Slaw
Ingredients
1 ½ lbs salmon (cut up in 2 inch chunks)
Marinade:
½ cup oil
¼ cup red wine vinegar
¾ Tablespoon garlic salt
¼ Tablespoon salt
¼ Tablespoon sugar
½ Tablespoon italian seasoning
1 large garlic clove (minced)
½ teaspoon pepper
1 Tablespoon water
Preparation
Mix all ingredients well. Add chunks of salmon and marinate for at least 30 minutes.
Batter:
2 cups milk
3 teaspoons salt
6 Tablespoons baking powder
3 cups flour
3 teaspoons garlic powder
4 eggs
Corn or peanut oil
Preparation
To prepare batter, slowly mix four, milk, baking powder, eggs, salt and garlic powder in large bowl. If too thick, add more milk. Pour oil about 1 inch deep into a large skillet. Get good & hot. Dip marinated salmon chunks in batter and fry, turning once. Fry until golden brown.
Grilled Cole Slaw
Ingredients
1 head green cabbage, cored
½ cup white vinegar
½ cup brown sugar
2 Tablespoons olive oil
1 Tablespoon cracked black pepper
Salt to taste
Preparation
Cut head of cabbage into 6 wedges and place on the grill. Grill cabbage wedges on all three sides, three minutes per side. Remove from grill and shred.
Mix remaining ingredients together and toss with shredded cabbage.
